I sunk too much $$ into this to fail. Last night I had my third weigh in and again only lost 0.5lbs. I didn't think I was that bad when I went to the beach but I guess I was.
My ketone pee stick still hasn't changed color which tells them my body is or isn't burning fat. I'm GOING to MAKE that stick change next week!
This will be my first weekend at home since I started this so I'm going to be focused on eating what I'm supposed to and getting into a workout routine. After I walked out of my appointment yesterday I felt a little defeated and I am determined to go in there next week knowing I did my best.
After my appointment I headed to the grocery store to get some fish. As I mentioned before I had steered clear of it because I don't like it that much, but you know what? That was a lie. I love salmon, I love catfish, and I LOVE fishsticks. Nom nom nom. So I got to the grocery store ready to do this teriyaki mahi mahi recipe since I have teriyaki at home, but no luck. No mahi mahi. Luckily I had taken the cookbook in with me just in case and found a quick and easy pan"fried" catfish recipe.
It was just sauteed zucchini and summer squash w/o seasoning (and non-stick spray)... which kind of smells like burning hair as you cook it... so I started to get a little worried. Then I seared the fish, which just had a light brush coating of olive oil, then continued it on lower heat to cook it all the way through. I actually left the fish in the pan a little longer than I needed to to give it a bit of a crisp. The recipe also cake along with a very interesting tartar sauce recipe. To me, tartar sauce is mayo and relish. I was originally weirded out by this recipe simply because of the tartat sause it wanted me to make/eat. It is light mayo, lime juice, chili powder, and cilantro. And guess what! It was bangin'. It really did taste like tartar sauce, but dare I even say BETTER? It added some great flavor to the fish which really didn't have much flavor at all, but I wouldn't say it was completely bland on it's own, but I basically just put a thin layer of the sauce over the whole thing since the fish was falling apart and it wasn't really a dipping kind of meal.
The veggies were surprisingly delicious too. No salt, pepper, NADA. A few bites tasted like raw pumpkin but overall it was a tasty little meal. The recipe only made one serving, but as usual I doubled it so I wouldn't have to cook 2 nights in a row. Plus I'm getting to know the guy that does the meats since I'm in there every 3-4 days.... maybe I'll start getting good deals... maybe. I also didn't remember to check if the fish was wild catfish or farm fresh. Apparently the calorie content is different so if it was wild I could have 6 or 7 oz and if it was farm I could have 5oz cooked. Something like that. Luckily I got a sweet food scale last week and it ended up being about 5.5 oz. Perfect.
So now that I've ventured into the white fish I can see myself really making it through this diet. Today is really the beginning. I'm starting over. Reevaluating my goals. Putting my foot down (even if it is on my own head).
